If backpacking isn't your style, you may wish to do the long distance Mattabesett and Metacomet trails as a series of day hikes.

For solo adventurers, I would suggest driving to the distant trailhead and locking a bike to a tree. Drive back to your starting point and begin hiking. A 6 mile dayhike is usually pretty tough when considering the bike ride back along roads. A marathon-distance round trip is fairly exhausting and quite enough for anybody. This is best done speedpacking with a Camelbak.

For those hiking with a partner, there are two options. You can either park a car at the distant trailhead and then begin the route together at the other side, or you can each solo hike starting from opposite ends and swap keys as you pass. The last option is good for large groups that you would like to split up.

Another idea is to put in long day of backpacking and hike directly to a B&B before sundown. This may cost a bit more money, but well worth the effort for the extra pampering. There may be a few locations that require very long hikes to get from one B&B to the next.
